I will usually do that also - if the plants is not real big yet, but starts blossoming, I pinch off the blossoms. You are correct that you want the plant to put its energy into making a larger, stronger plant before it diverts its energy into growing the tomatos. I also will trim off the bottom leaves that are not producers so that the plants energy doesn't go into leaves that won't end up producing anything.
